Sometimes you just need a simple solution to get things going again. My simple solution? Oreo truffles.

For a while now, I've been in a blogging rut. Completely stuck, not motivated at all. Despite my promising start to year by making all these goals and promises to stick to a better schedule, plan more and bake more.It was just all downhill from there.

Before I had even started, I just felt stuck.

Every time I made something that tasted bloody amazing and took photos of it, I kept thinking how awful the photos were, how they weren't good enough. I'm a serial overthinker and self-doubter. I know that. But it doesn't stop me from doing it. 

For the longest of times, I didn't want to publish a recipe with bad photos because I wanted to be proud of it. And if it simply didn't look good enough, I wouldn't post it.

Which probably explains why I have so many draft posts just sitting there...

I started to doubt my entire blog too. The look, the name, the feel of it. I began to research more, try to find a niche like they say you should, think up new blog names. Nothing felt right.

So I didn't blog.

I've always wanted this blog to be more like a diary of sorts, a way to blog my journey through life as a hungry person who liked to create stuff, travel and just eat loads of oreos. 

I don't want to doubt my photo quality or whether that post was good enough. I just want to create new content and bake til my heart's content. I want to be able to see progress in recipes, in photography, in composition, I want to see the change in myself - crap photos and all!

No, my photos won't always look perfect and get accepted on Food Gawker. But I just want to create stuff that isn't perfect, be spontaneous with posts and not stick to a schedule. 

Which is why I'm stealing adopting a new mantra to life and blogging from Hannah Gale: care less, do more (go and have a little read!) Her post really changed my outlook on blogging and I'm now starting to feel less stuck.

I want to enjoy blogging without worrying so much.

I'm going to bake more of what I want, post about what I want and ultimately care less about everything in between. No, I won't post 5 times a week like a good blogger (praise all of you who can!) and schedule a bunch of posts in advance. I'm just going to go with the flow.

So I got myself back into the kitchen, my happy place, and made something super simple and easy. If you find yourself in a rut with your blog, stop overthinking and just do more of what you want.

And if all else fails, whip up a batch of these truffles in under an hour. They cure it all.

Quick and Easy Oreo Truffles

Adapted from Kraft
Makes: 16 inch balls

20 Oreos
115g (8oz) cream cheese*
200g (7oz) any chocolate

1. Crush oreos or blitz them in a food processor until they resemble a fine crumb. 
2. Reserve a small portion of oreo crumbs to the side for sprinkling on top. Mix together the rest of the oreo crumbs and cream cheese until well combined. 
3. Roll roughly 16 balls (1 inch) - I used a ice cream scooper that just a bit bigger than an inch and it works great to get even sizings. Freeze for 10 minutes, or pop in the fridge for 20mins. 
4. Melt chocolate in a deep dish (for dipping the truffles into) and wait for the chocolate to cool slightly. Using a fork or dipping tools, dip the truffles into the chocolate and then place on grease proof paper to set. To finish, sprinkle with remaining oreo crumbs. 
5. Pop in the fridge to chill until firm and then enjoy! ..and try not to devour them all in one sitting. 

*I used light cream cheese and it didn't make a difference to the taste or texture!
